Sydney, Whitsundays, South Island NZ + Rotorua + Bay of Islands

Embracing a strong organic and seasonal approach, we prioritise taste over standardisation, contrasting with supermarket produce. This ensures our vegetables boast complex and bold flavours to elevate the Ahi dining experience.

Day 1-3

At leisure, Sydney

Circular Quay’s ferries reach Manly, Watsons Bay or Taronga Zoo within twenty to thirty minutes, with the Opera House and Harbour Bridge in view the whole crossing. Bondi to Coogee is a coastal walk in its own right, and Collins Flat Beach, reached on foot or by bike from Manly, is one of the harbour’s quieter stretches. The Blue Mountains and Royal National Park sit within day-trip range for those after bushland rather than sand.

Fly Sydney to Hamilton Island

Day 5

Sail and snorkel Whitehaven and Chalkies Beach

A full-day catamaran sail from Hamilton Island takes in Chalkies Beach on Haslewood Island, with clear water and a wide reef for snorkelling, before lunch on board and an afternoon at Whitehaven Beach, known for its near-pure silica sand. Snorkelling gear and instruction are included, with the option to take part in the Eye on the Reef citizen science monitoring programme.

Day 6

Journey to the Heart, Great Barrier Reef

Heart Reef, a naturally heart-shaped formation in Hardy Reef, is only visible from the air or by landing directly beside it. The helicopter flight crosses the Great Barrier Reef before setting down on a private pontoon in Hardy Lagoon, where a glass-bottom boat circles the reef and the lagoon is open for snorkelling, with sparkling wine included.

Day 7

At leisure, Hamilton Island

Hamilton Island sits inside the Great Barrier Reef itself, with Whitehaven Beach and the wider Whitsundays a short boat ride away. Scenic flights, sunset sea kayaking, a round at Laguna Quays, or a full day out with Renegade Fishing Charters are all on offer, alongside the koala enclosure at the island’s wildlife park for something gentler.

Day 8

Fly Hamilton Island to Queenstown

Day 9-10

At leisure, Queenstown / Wānaka

Queenstown’s adventure reputation, bungy, skydiving, jet boating, sits alongside quieter options: e-bikes along the Arrow River Trail into Gibbston Valley for wine, or the Onsen Hot Pools, cedar tubs built into the hillside above the Shotover Canyon. Twenty minutes on, Wānaka trades intensity for scale, the Rob Roy Glacier Track climbs through forest to hanging ice, while Rippon, one of Central Otago’s oldest vineyards, looks straight down the lake to the Southern Alps.

Day 11

Wilderness Jet Boat, Dart River

Dart River Safaris’ jet boat runs up the braided, glacier-fed Dart River into Mount Aspiring National Park, a UNESCO World Heritage area, with guides weaving in Māori legend and the history of the old Greenstone trail along the way.

Day 12

Milford Fly/Cruise/Fly

A 35-minute scenic flight from Queenstown crosses glaciers, lakes and rainforest en route to Milford Sound, where a cruise runs the full length of the fiord to the Tasman Sea, with seals, dolphins and, in season, penguins along the way. The return flight takes a different route for a second look at the scenery, weather permitting.

Day 13

Fly to Rotorua

Day 14

Rotorua Highlights Tour (private, full day)

A scenic flight lands directly on Mt Tarawera’s summit for a short walk and a look into the 8km rift left by New Zealand’s largest eruption in living memory, before returning to town for the National Kiwi Hatchery and an evening at Te Puia, dinner, a Māori cultural performance with haka, and a late finish in the cedar pools of Wai Ariki Spa overlooking the lake.

Day 15

Hobbiton Movie Set Tour

Hobbiton occupies a working sheep farm near Matamata that Peter Jackson chose for the Shire in the Lord of the Rings and Hobbit trilogies. A guided walk covers Bag End, the Hobbit holes of Bagshot Row and the Green Dragon Inn, with the sets left standing rather than dismantled after filming wrapped.

Day 16

Travel to Paihia, Bay of Islands

Day 17

Island Hopper Day Cruise

A catamaran sails out of Paihia into the Bay of Islands, stopping at a wildlife sanctuary island where regenerating bush shelters native birds rarely seen on the mainland. The pace is set by the day: snorkelling, paddleboarding, a walk to a picnic in a separate bay, or simply staying on the beach.

Day 18

Island and Wildlife Day Cruise

A second day on the water, this time aboard a 50-foot sailing catamaran, with the focus on dolphins, penguins and seabirds in their natural habitat, in keeping with the operator’s dolphin-viewing-only policy and its conservation commitments in the Bay. A stop at an island sanctuary allows for further snorkelling, walking or simply relaxing, with a Kiwi-style barbecue lunch on board.
